The Wallingtons moved from Sydney in 1990 to establish a vineyard and make wine.They also run sheep and cattle and grow olive trees. Now18 hectares of grapes are grown Organically and Biodynamicaly to produce great wines.
Sales are primarily from cellar door and mail order Wine is made on site in a large straw bale winery. We hand pick our grapes and make wine in small batches, wild ferments in open vats in general,then basket pressed to oak for extended maturation of 2 years before being bottled.
Also organic and biodynamicaly grown olives produce a cold presses extra virgin Olive Oil.The whole farm 400 ha is now in conversion to organics and the future will see organically farmed cattle, sheep and grain.
